Ora by Ettore Botrini, at the iconic One&Only Aesthesis, continues the Epicurean Tables gastronomic concept with a new, exceptional meeting of leading contemporary culinary creators. On Friday, April 24, Chef Ettore Botrini welcomes acclaimed Chef Manolis Papoutsakis for a refined four-hands dining experience that highlights modern gastronomy through two distinct yet perfectly complementary perspectives.

Manolis Papoutsakis, an award-winning chef with Cretan roots, is one of the most dynamic figures in the Greek culinary scene. He is the creator behind acclaimed restaurants such as Haroupi and Deka Trapezia in Thessaloniki, as well as Pharaoh in Athens. His culinary identity is defined by a deep connection to Cretan tradition, which he reinterprets through modern techniques, clean flavors, and a strong emphasis on seasonality and high-quality ingredients.

Alongside him, Ettore Botrini—one of the most important figures in Greek gastronomy—continues to evolve Mediterranean cuisine with precision, imagination, and respect for ingredients, creating experiences that balance tradition with contemporary expression.

For this special evening, the two chefs co-create a carefully curated tasting menu, where their personal influences and techniques come together in harmony. The menu opens with a welcome from the chefs and continues with a refreshing, modern interpretation of kakavia (fish soup), where ingredients such as shrimp and bonito are combined with citrus, highlighting the freshness of the sea. This is followed by an inventive dish that balances tartare and “kokkinisto” (slow-cooked red sauce), featuring beef fillet, parmesan, and a rich sauce, blending intensity with finesse.

The journey continues with red mullet accompanied by artichoke, peas, asparagus, and lemon—a dish that expresses seasonality and purity of flavor. The main course features organic beef with clay-baked potato, morel mushrooms, Greek coffee, and nutmeg, creating a deep, earthy, and multi-layered culinary experience. The dinner concludes with a creative take on portokalopita (orange pie), paired with crème catalane, citrus syrup, and orange blossom sorbet, leaving a fresh and aromatic aftertaste.

The result is a narrative of flavors that showcases the richness of the Greek land through a contemporary, expressive, and elegant approach, offering a complete fine dining experience.
